Perfect Cream Cheese Pound Cake

I made this cake for my mothers birthday and she loved it.

Perfect Cream Cheese Pound Cake

1 and 1/2 cups (3 sticks; 345g) unsalted butter, softened to room temperature

8-ounce (226g) block full-fat cream cheese, softened to room temperature

2 and 1/2 cups (500g) granulated sugar

1/3 cup (80g) sour cream, at room temperature

2 teaspoons pure vanilla extract

6 large eggs, at room temperature

3 cups (345g) cake flour (spoon & leveled)

1/2 teaspoon baking powder

1/8 teaspoon salt

optional for serving: homemade whipped cream & fresh berries


Preheat oven to 325°F (163°C). Not 350°F. Generously grease a 10-12 cup bundt pan with butter or nonstick spray. I use butter.

Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter on high speed until smooth and creamy, about 2 minutes. Scrape down the sides and up the bottom of the bowl with a rubber spatula. Add the cream cheese and beat on high speed until completely smooth and combined, about 1 minute. Add the sugar and beat on high speed until combined, about 1 minute, then add the sour cream and vanilla and beat on high speed until combined and creamy. Scrape down the sides and up the bottom of the bowl with a rubber spatula.

On low speed, beat the eggs in 1 at a time allowing each to fully mix in before adding the next. Careful not to over mix after the eggs have been added. Once the 6th egg is combined, stop the mixer and add the cake flour, baking powder, and salt. Beat on medium speed *just* until combined. Do not over mix. Using a rubber spatula or sturdy whisk, give the batter a final turn to make sure there are no lumps at the bottom of the bowl. The batter will be a little thick and very creamy.

Pour/spoon batter evenly into prepared pan. Bang the pan on the counter once or twice to bring up any air bubbles. Bake for 75-95 minutes. Loosely tent the baking cake with aluminum foil halfway through bake time to ensure the surface does not over-brown. The key to pound cake is a slow and low bake time. Use a toothpick to test for doneness. Once it comes out completely clean, the pound cake is done. This is a large heavy cake so don’t be alarmed if it takes longer in your oven. If it needs longer, bake longer.

Remove cake from the oven and allow to cool for 2 hours inside the pan. Then invert the slightly cooled pound cake onto a wire rack or serving dish. Allow to cool completely.
Slice and serve with optional toppings like homemade whipped cream & fresh berries.
Cover leftover cake tightly and store in the refrigerator for up to 5 days.

Vanilla Cream Cheese Sour Cream Icing!!!


½ cup sour cream
½ cup of cream cheese

6 Tbsp of all-purpose flour

2 tsp Vanilla
2 Cup Granulated sugar
1 cup of butter (2 sticks)

I put everything together in the proper size bowl and mixed it. I put the bowl of icing in the refrigerator while waiting for the cake to cool down. Once the cake cooled the icing was applied with the back of a large spoon all over the cake. The spoon helps smooth the icing on better without disturbing the cake.

It's #MMC30

I can't think of better time to kick off my rebranded, brand spakin new website and blog. It is hard to believe it's been thirty years! Time sure has gone by quickly. It doesn't seem real, but this fact cannot be reckoned with...lol (there is video footage that proves it).

Being a part of the MMC #30 reunion has brought up so many memories. It is exciting to see the list of Mouseketeers that plan to attend the events, some I've worked with and others I have yet to meet. Part of the event is remembering those that have passed on since the commencement of production. I will be singing a song that many MMC viewers remember; “Miss You Like Crazy”. I sung this song by Natalie Cole in remembrance of my father who passed away while I was on the show. With much success this was such a hard time in my life. The fact is I will always miss him like crazy. Wow, it's been thirty years since my dad has passed away. As a kid I could not have imagined so much time would pass without the physical presence of my father and yet I survived. I'm very thankful to my mom who allowed me to grieve and help me work through this heartbreaking time.

While I vocalize and rehearse, preparing for my MMC #30 debut there are many memories that come to mind. MMC was such a huge part of my past. Many times, I've had to put off my rehearsal time to get over my tears as my throat tightens and I just couldn't get a note out. It doesn’t feel fresh as in I just lost my father last year but it doesn’t seem like thirty years ago either. As I inhale a deep breathe and recuperate, I remember the good times performing on set with the lights, and cameras in front of the studio audience, the many skits, the interviews, and many celebrities I had the opportunity to meet. The videos, and exciting musical productions, (which I enjoyed the most), the choreography, and costumes for each production. I had THE BEST TIME performing and being on stage. It is where I am to be!

Last Night Rocked! Oh Baby!

PRAISE THE LORD!!! It was an awesome evening last night. My bits finally came to me Friday. I would have appreciated more time nevertheless WooHoo I rocked my set. I am praying to God to get some footage. I forgot to ask someone to take pictures. Therefore, I am going to just have to do it again!!! Although before every performance I swear I am retired from comedy. I was so nervous all week, breaking out in night sweats and everything. I was so happy to finally breathe. It is really impossible to have a civilized conversation with me before I go up. Don’t even try. And this is why I continue to challenge myself. I will not allow fear to get a grip on me. Plus, I really do enjoy being on the stage making people laugh and people enjoy my work. I was so unusually comfortable last night I took interactive risk I haven’t felt at ease enough to take in the past. I also took the risk of bringing my phone up with me because I kept forgetting the material but I handled it like a pro and still rocked it. No one cared. The audience rolled with me. Often times I am quite transparent on stage and people seem to appreciate that authenticity.

It was fun. My friends Ki and Anisha came out to support me and I am so thankful for them for their support. Thank you to them and all who have come out to support. You have no idea no how much it means. One thing that must be remembered about Stand Up Comedy is the audience is like a box of chocolates. You never know what you will get. The material that had one audience rolling will have the other one chuckling or you can hear a pin drop. YIKES!! It can be frightening. You got to roll with it and be fearless. I have been blessed. Jay Singh another funny comedian packed the place out and they came ready to laugh and have a good time. 

Stand Up gets me out of my comfort zone so I will continue to press forward even when I want to quit.  That is what I say now because I got my victory and it is over, LOL.  I am proud to be a clean comic. I do not curse or talk about sex. I tried once to say noassatall but I didn’t like it. So I dropped it. I want to keep it clean. I'm going to tighten up this set, add and subtract a few things, and perform it again. I really enjoyed performing my set last night. Thank you, Dave McNary, for your encouragement and supporting my stand-up comedy journey providing me with such an awesome venue to perform. So if you missed it last night do yourself a favor and be there the next time. You deserve to "treat yourself". Come out and laugh with me and other comedians. See you there!

I do not like doing this and I try to avoid it but I cannot this time. OMG…I cannot believe this. If you have bought or received gift certificates from the TOTAL WOMAN GYM AND SPA “BEWARE”. Like me most likely when you bought your gift certificates you were never given an official expiration date and you were told they never expire. They did not give you a tangible gift certificate. They would keep your purchases on file and whenever you wanted to use them they would be available. 

I just got off the phone with the manager of the spa on Topanga Canyon to find that policy has changed since the new owners have taken over a few weeks ago. Whatever gift certificates you have that you didn’t think would expire they have now expired and suddenly the certificates have an official expiration date. I had 5 massages/facials which I was told would never expire. I spent about $400 for those gift certificates which are now invalid however they did offer me a package “DEAL” of massages/facials providing that I pay another $400. 

How insulting.  And no, they are not offering anything except that "deal", all of nothing from a company that is supposed to be so successful, TOWN SPORTS INTERNATIONAL as I kept hearing from the manager. I AM SO IMPRESSED. They kept the money when the business changed but I do not keep the massages/facials. They add the money to their income or asset column will we take the loss. When someone tells me how successful someone or a business is I have learned that it is not always by being honest or fair which seems to be becoming more common these days.

I was so looking forward to using these services. I will not have a massage at this gym. Why should I? I already spent enough and got nothing for it. It seems I would be expected to patronize this spa after losing my money to them. They must think we are all crazy. I expect to be respected as a consumer which is becoming less common these days. Although this is a new company I trusted and went by what I was told and I got burned. 

According to the manager so did 500 other people and that is what she is aware of. How many more are there? We couldn’t all be wrong or upset for nothing. She claims she has sent over 300 emails trying to get some concessions but the company Town Sports International will not budge. Apparently, they are so successful around the country that you should be willing to lose money because of their success. How about that? 

I will not spend a dime with their day spa and I am considering a new gym. Perhaps I will go back to hopping around using Groupons, at least I know the true deal up front. I can go to any spa and spend money. 

I am so disappointed and disenchanted with this spa altogether. So friends be careful. These new owners do not seem to be willing to work with you and to honor what you have been told and trusted. I suppose they can add the money to their spreadsheets in their asset or income column which you are at a loss. But well, THEY are successful. Hmmmm……

Many of us are so hard on mom and pop companies and indies yet we tolerate and continue to support big corp while they take from us and keep getting bigger. When will we stand up and say no more? Let them use their money trying to buy up everything and change the laws by then perhaps we will exercise in a different way.
